Ingredients
- 1 large head of fresh cauliflower, cut into bite-sized florets
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon garlic powder
- ½ teaspoon Italian seasoning (optional)
- ¾ cup shredded sharp cheddar cheese (or a mix of cheddar and Parmesan)
- Salt and freshly ground black pepper to taste
- ¼ cup panko breadcrumbs (optional, for extra crunch)
- Freshly chopped parsley for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Lightly grease a large, rimmed baking sheet or a 9×13-inch baking dish with non-stick spray or line with parchment paper for easy cleanup.
- Season the cauliflower by placing the florets in a large bowl. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss with until every piece is well coated.
- Roast the cauliflower in an even layer on the prepared baking sheet. Bake for 15 minutes, or until the edges begin to turn golden brown.
- Add cheese and breadcrumbs. Remove the pan from the oven and give the cauliflower a quick stir with a spatula. Sprinkle the shredded cheddar cheese evenly over the top, then add the panko breadcrumbs if using.
- Finish baking for another 8 to 10 minutes, or until the cheese is melted and golden brown and the panko is crispy.
- Garnish and serve after letting it cool for 5 minutes. Garnish with fresh parsley if desired and serve while hot.
