Healthy Cheesy Roasted Cauliflower -Medford

Ingredients

  • 1 large head of fresh cauliflower, cut into bite-sized florets
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning (optional)
  • ¾ cup shredded sharp cheddar cheese (or a mix of cheddar and Parmesan)
  • Salt and freshly ground black pepper to taste
  • ¼ cup panko breadcrumbs (optional, for extra crunch)
  • Freshly chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Lightly grease a large, rimmed baking sheet or a 9×13-inch baking dish with non-stick spray or line with parchment paper for easy cleanup.
  2. Season the cauliflower by placing the florets in a large bowl. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss with until every piece is well coated.
  3. Roast the cauliflower in an even layer on the prepared baking sheet. Bake for 15 minutes, or until the edges begin to turn golden brown.
  4. Add cheese and breadcrumbs. Remove the pan from the oven and give the cauliflower a quick stir with a spatula. Sprinkle the shredded cheddar cheese evenly over the top, then add the panko breadcrumbs if using.
  5. Finish baking for another 8 to 10 minutes, or until the cheese is melted and golden brown and the panko is crispy.
  6. Garnish and serve after letting it cool for 5 minutes. Garnish with fresh parsley if desired and serve while hot.
